This wonderful, nutty dish is easy to make and works well as a side dish when served warm. It also makes a great summer dish served either slightly warm or at room temperature - so it's great for potlucks and picnics!
The fragrance from the basmati rice mixes beautifully with the feta cheese, and the gorgeous aromas of basil and pine nuts make for a nicely satisfying meal. The olive oil brings all the flavors together in a very delicious, simple and healthy dish.
 All the ingredients can be increased or decrease to your liking
If you are salt-sensitive, no need to add salt to the cooked rice, as the feta cheese tends to have plenty of flavor. You can also bet low-sodium feta to further reduce your sodium intake
If you are concerned about fat, you can lessen the amount of olive oil (remember, some fat is good for your diet - it just depends on which ones - and olive oil is one of the best.)
 2 cups cooked brown basmati rice - still very warm (see salt note below) 1/2 cup toasted pine nuts (optional: grind the pine nuts to a medium grind) 1 large loosely packed handful of fresh basil, chopped into small pieces 4-6 oz. feta cheese, crumbled 1-2 tablespoons Extra Virgin Olive Oil (to moisten dish as needed. You won't need much if the rice is still fairly moist).

In a large bowl, mix the first 4 ingredients together. Slowly pour enough olive oil over the dish to incorporate and mix thoroughly. The heat from the rice will warm the feta, soften the basil and bring out the wonderful flavor and aroma of this dish. Serve warm and immediately.
