Today we feature a delicious recipe for Curried Rice Salad. Curry is actually a mix of spices, and has been used both as a food spice and medicinally in India and China for centuries. Its primary ingredient is Turmeric, which has a wide range of health benefits, including helping arthritis and digestive issues, lowering cholesterol, preventing many types of cancer, improving liver function, and preventing Alzheimer’s disease.
It's important to eat at least 3 servings of whole grains each day. This salad uses brown rice, one of the healthiest whole grains available. Studies show that women who eat whole grains regularly (instead of refined grains like white rice) weigh less and can maintain health body weight more easily. Add this salad to your weekly diet to please your palate and help keep you steady in your weight management and health goals.
 A recent study showed that turmeric’s main ingredient, curcumin, has the ability to battle symptoms of Alzheimer’s, a disease that affects almost 5 million Americans.
 1 cup organic brown basmati rice, washed 1 cup organic cucumber, diced 1 organic carrot, julienned or grated 8 organic basil leaves, minced Dressing: 1/2 cup Vegenaise (vegan mayo) 1 Tablespoon each soy sauce and agave nectar 1 teaspoon each rice vinegar, toasted sesame oil, & curry powder Pinch black pepper Sea salt to taste

1. Cook rice according to package (I personally never measure the water. I boil the rice in a lot of water and check it a few times to see when it’s done cooking. Then drain.) Drain and put in medium bowl with veggies and basil.
Mix dressing ingredients together in a small bowl, and then fold into rice salad.
