Root vegetables are delicious and packed full of precious vitamins and minerals. Not only are they low in calories and high in fiber, root vegetables are bursting with essential nutrients that we should be consuming on a daily basis. Here's a delicious and healthy recipe that can support you at the root of your fitness program. It's a winter's delight!
 Root vegetable found to lower cholesterol and blood pressure. Beets also protect against birth defects, cognitive disorders such as Alzheimer's, osteoporosis and cancer.
 3 parsnips, peeled and cut into pieces 3 potatoes, peeled and cut into pieces 3 carrots, peeled and cut into pieces 3 sweet potatoes, peeled and cut into pieces 1/4 cup olive oil 2-3 cloves garlic - chopped or pressed 2 teaspoons mustard seeds (can substitute powder) 2 teaspoons coriander seeds, slightly crushed (can substitute powder) 1 teaspoon cumin seeds (can substitute powder) 2 bay leaves Salt and pepper to taste

Preheat oven to 375 degrees. Bring a saucepan of lightly salted water to a boil Cut roots into chunks and boil them for 2 minutes, then drain.
Mix together the olive oil and powdered seasonings, bay leaves and garlic (if using seeds - at later - see below). Pour olive oil mixture into a roasting pan and add veggies and toss Saute on stovetop over medium heat until veggies are golden brown at the edges
Add seeds (if using powder, just add the following) season with salt and pepper to taste and cook one more minute. Transfer to the oven and bake 45 minutes turning occasionally
